- En una olla mediana, dejamos remojando toda la noche las lentejas en 3 tazas de agua.
- Al otro día, lavamos las lentejas y renovamos el agua, agregando 4 tazas de esta. Dejamos cocer a fuego lento por 25 minutos.
- Agregamos la zanahoria y zapallo, además de 1 cucharadita de sal más la pizca de azúcar, y dejamos cocer por 15 minutos.
- Mientras dejamos cocer las verduras, picamos la cebolla en cubitos y sofreímos con un poco de aceite y 2 dientes de ajo picado (1 cucharadita de pasta de ajo), más 1 cucharadita de sal. Dejamos sudar la cebolla a sartén tapado por 5 minutos.
Destapamos, y una vez que la cebolla se vuelva dorada, agregamos el ají color y orégano. Además en esta oportunidad agregué 1/2 cucharadita de Merquén. - Vaciamos el pino a la olla, agregamos el arroz y la acelga, y dejamos cocer por 20 minutos más a fuego lento.
- Una vez pasado el tiempo, apagamos el fuego, y dejamos reposar por 10 minutos más. Servimos en plato hondo, y lo podemos acompañar con queso parmesano rallado o con una ensalada chilena, o ambas aprovechando la chanchada. O más merquén, ¿por qué no?
- Espero que les guste. En este caso, no tenía acelga, pero igual lo agregué a la receta, porque este guiso sin la acelga, no es lo mismo.
